Black Bean Taco Soup

The best meals are ones that you can just dump in a bunch of ingredients and have dinner ready in no time!



Ingredients:

  • 1 lb. ground turkey or beef

  • 1 tsp minced garlic

  • 2-16 oz. can black beans, drained and rinsed (see note)

  • 1-15 oz. can corn + liquid from can

  • 1-28 oz. can diced tomatoes + liquid from can

  • 2 cups water, chicken or beef broth

  • 1-10 oz. bag of frozen chopped bell peppers (optional)

  • 1 oz. packet of Ranch seasoning (about 2 Tbsp)

  • 1 oz. packet of taco seasoning (about 2 Tbsp)

  • 1 tsp onion powder

  • 1/2 tsp salt

Directions:

  1. In a skillet or the Instant pot on "saute", brown the ground meat with minced garlic until the meat is no longer pink.

  2. Combine all of the ingredients in a pot and stir well.

Cooking options:

  • Instant pot: Cook for 2 minutes and quick release.

  • Stovetop: Cook on medium heat for 8-10 minutes or until heated through.

  • Crockpot: Cook on high for 2-4 hours.

Serve with sour cream (or plain Greek yogurt), cheese, and tortilla chips. Or whip up a box of corn bread or cheesy garlic biscuits to go with the soup!


Notes:

  • Beans: You can do two types of beans (like subbing out 1 can of black beans with kidney or great northern beans). This also makes a ton of soup so if you wanted to make a little less, you could just do 1 can of black beans and possibly reduce the liquid by 1/4 cup).
