Eggs, rice, vegetables, and a little bit of Cajun spice come together to make the ultimate comfort food!
Ever since my husband and I got married over two years ago, he's been asking me to make eggs & rice like he had when he lived in Louisiana for two years. The problem was, he didn't know what all was in it or how to make it. After spending a couple hours going through his storage boxes, he found the recipe! But it only told us a list of ingredients and no quantities or instructions, so the experimentation began!
1 cup of uncooked rice
2 cups water
2 tsp chicken bouillon or paste
1-4 pk. of sausage links (I like chicken apple sausage)
1 red or green bell pepper, diced
1/2 red onion, diced
3 green onions, thinly sliced
1/4 tsp salt
1/4 tsp pepper
1/2 tsp garlic salt
2-3 tsp Cajun seasoning (depending on spice level)
Cook your rice with water and chicken bouillon. I do it in my Instant Pot for 5 minutes with 10 minute natural release or follow these instructions to cook on the stove.
Prep all of your vegetables and sausage. You'll want them diced pretty small, especially the red onion.
Lightly spray a large skillet with cooking spray and add the sausage. Cook on medium heat until each piece is lightly browned (about 5 minutes).
Add in the vegetables and cook until they are softened. If needed, add in more oil.
Crack your eggs into a bowl and whisk with salt, pepper, and garlic salt.
Pour the egg mixture into the skillet on low heat, constantly stirring and scraping the bottom.
After about 5 minutes, when the egg is almost all the way cooked, add the rice and 2 tsp of Cajun seasoning. Stir everything together and cook for a few more minutes until the egg is fully cooked. Taste and add in more Cajun seasoning or salt, if needed.
My two favorite Cajun seasonings to use are Slap Ya Mama and Punch Daddy, but you can also make your own using this recipe.
This is the optimal egg to rice ratio for us, but feel free to add more or less of either.
